Special kolhapuri chicken dum biryani



Ingredients:
1.    Chicken- 1 kg
2.   Rice- 1 kg
3.   Onion- 1 kg large chopped
4.   Tomato- 2 chopped
5.   Ginger- garlic paste- 2 tbsp
6.   Coriander leaves- 2 tbsp
7.   Mint leaves- 1 tbsp
8.   Curd- ½ cup or lemon juice- 1 tbsp
9.   Dum biryani masala- 1 tbsp
10.        Spicy masala- 1 tbsp
11. Salt to taste
12.        Turmeric powder- ½ tbsp


For Marination:

    1.    Ginger- garlic paste, coriander leaves, mint leaves, curd or lemon juice, dum biryani masala, spicy masala, salt, turmeric powder.
    2.    All are marinated with Washed chicken for 2 hours.
    3.   Marinated mixture is place into refrigerator.

For boiling rice:

   1.    Take bowl and 1 liter of water for boiling rice.
   2.   In water, add black pepper- 2 to 3, cardamom- 2 to 3, cinnamon- 1 stick, clove- 2 to 3 and bay leaf 2.
   3.   Add 1 tbsp oil for separation of rice.
   4.    Add salt to taste and boil it.
   5.   After boiling water, Add rice and half cook.
   6.   After half cook rice, remove water.

Method:
   
   1.    Take a bowl and heat oil.
   2.   After heating oil, add small chopped onion and fry it.
   3.   After frying it, add chopped tomato and fry it.
   4.   Add marinated chicken and fry properly.
   5.   Add some water for stir it.
   6.   Cook chicken properly.
   7.   Fry large chopped onion means that makes crunchy.
   8.   Take large pan and makes steps of rice, fried onion and chicken masala.
   9.   First step is rice then fried onion and then chicken masala.
   10.  Repeat this procedure in 3 times.
   11.  Burn coal and take a bowl and put coal in bowl.
   12.    And on coal pour some ghee and this bowl is place on to the above pan.
   13.   Cover this pan with paper.
   14.   After 10 minutes, off gas.
   15.   Garnishing with coriander leaves chopped.



Note: First, ready chicken masala. Second, ready boiled rice. Third, Then makes step of both.

crunchy pakoda with gobi, hari mirch and onion.......



Ingredients:

   1.    Gobi-  1 chopped
   2.   Green chili- 2 to 3 chopped
   3.   Onion- 2 chopped
   4.   Salt to taste
   5.   Red chili powder- 1 tbsp
   6.   Turmeric powder- ½ tbsp
   7.   Gram flour- 1 cup
   8.   Corn flour- ½ cup
   9.   Oil for frying




Method:

   1.Take a bowl and take small chopped Gobi, chopped green chili and chopped onion.

    2.   Add gram flour, salt, red chili powder, turmeric powder.

    3.  Then add green chili, onion.

    4.   Mix it and add some water then mix it.

    5.   Take a pan and heat oil.

    6.   After hitting oil, Fry pakoda until color comes light brown.

    7.   Serve with pudina (mint) chutney or tomato souce.
